They were peanut butter cupcakes, with cream cheese icing. I was surprised that the peanut butter wasn&#8217;t over powering, but just enough. The recipe was simple enough that it made a great baking activity for myself and little miss (who is three.)
Ingredients

55 g butter (softened)
225 g soft light brown sugar
115 g peanut butter
2 eggs
2 tsp baking powder
1 tsp vanilla extract

<li>55 g butter (softened)</li>
<li>225 g soft light brown sugar</li>
<li>115 g peanut butter</li>
<li>2 eggs</li>

<li>225 g plain flour</li>
<li>100 mL milk</li>

<p><strong>Method</strong></p>
<ul>
<li>Preheat the oven to 180c</li>
<li>Line baking tray with 30 mini cupcake patty pans.</li>
<li>Combine butter, sugar, and peanut butter. Mix well.</li>
<li>Gradually beat in eggs and add vanilla extract.</li>
<li>Sift in the flour and baking powder, then fold them into the mixture while adding the milk.</li>
<li>Spoon into patty pans.</li>

<p>We as a family have eaten a few too many of these cupcakes, I&#8217;m fairly sure they are going to be requested often.</p>
<p>I am looking forward to perfect both the &#8220;cupcake shape&#8221; as mine tend to explode and get uber big. I just want to get one batch that are kinda awesome looking!</p>
<p>I have a list of cupcakes I want to make. All types, from carrot and orange to banana and pecan, to chocolate brownie cupcakes! I&#8217;m going to get real fat eating these&#8230;.</p>

			<content:encoded><![CDATA[<p>I can&#8217;t cook, I think I&#8217;ve once made a Feta and Red Onion tart, and a stir fry here and there, but that&#8217;s about all. The boy cooks for us, and does well. I slightly sit in the lounge keeping out the way, so I don&#8217;t somehow mess things up.<br />
However, I have always loved to bake. I used to help my mum bake cakes when I was younger (except I&#8217;d lose interest when it hit the oven, so annoyed my mum because I wouldn&#8217;t help clean). I&#8217;d randomly bake cakes once I moved out, but from a packet, and rarely. I&#8217;d always want to make cookies, cakes, or cupcakes, but I&#8217;d never have the ingredients at the time I&#8217;d want to make it, and when I have the chance to buy ingredients, I&#8217;m over it.<br />
However, in my attempt to be more &#8220;housewifely&#8221; I decide to stop being lazy and actually bake properly. I took some inspiration from <a href="http://jenn.nu">Jenn</a>, as she is a busy mother, busy worker and still occasionally bakes fun things for her family. And from <a href="http://vanillasilence.com">Monnie</a>, she&#8217;s fun, funky and makes great cupcakes. Monnie also runs a new <a href="http://monniecakes.com">cupcake</a> site, which has recipes for cupcakes, and some tips! I&#8217;m definitely looking forward to that site developing as I need help baking!</p>

<p>On the weekend I went off to buy some supplies, ingredients, new utensils and a cupcake/muffin/dessert treat cookbook, <a href="http://www.amazon.co.uk/Cupcakes-Cookies-Other-Tempting-Treats/dp/1407573187">1001 Cupcakes, Cookies and Other Tempting Treats</a>. It&#8217;s fun, a pretty book, and everything looks so yummy. I tried my hand at my first ever, from scratch, totally made by me batch of cupcakes. I have to say, I kinda decided to change it a little, and swapped the flavoring of the icing around, pure vanilla cupcakes sounded too boring. For my first attempt I probably should have stuck to the recipe, but hey I&#8217;m a rebel, or something.</p>

<p>They didn&#8217;t look the best, the icing is a bit frumpy, the tops kind of imploded, and the edges got a bit too brown. They tasted good, and it was so much fun to do. I&#8217;m definitely checking out the other recipes in the book, and looking for more ideas, toppings, and fun tools to make it easier.</p>
